🌱 Vegan Comfort Food: Homemade Hamburger Helper 🌱




At Blossom Brightwell, we believe that nourishing the mind starts with nourishing the body. That’s why I’m sharing one of my go-to comfort food recipes, a plant-based twist on the classic Hamburger Helper. It’s perfect for those days when you need something hearty, satisfying, and packed with nutrients.


Ingredients:

  • 3 cups bow tie noodles

  • 1 red onion, finely chopped

  • 1 cup vegan milk of your choice

  • 1 cup vegan cheddar cheese sauce

  • 2 cups frozen mixed veggies (corn, peas, green beans, carrots)

  • 1 package of vegan ground meat (of your choice)

  • Your favorite seasonings (use your preferred seasonings to taste) I recommend, garlic, salt, black pepper, umami seasoning from 365, and small dashes of nutritional yeast and Shwarma seasoning to taste)


Instructions:

  1. Cook the Pasta: Boil 3 cups of bow tie noodles according to package instructions. Drain and set aside.

  2. Prepare the Vegan Cheese Sauce: While the pasta is cooking, sauté a finely chopped red onion in a pan until translucent. Add 1 cup of your favorite vegan milk and 1 cup of vegan cheddar cheese sauce. Stir and let it simmer until thick and creamy.

  3. Sauté the Veggies: In another pan, sauté the frozen mixed veggies until they’re tender. Season to taste with your favorite herbs and spices.

  4. Cook the Vegan Ground Meat: In a separate pan, cook the vegan ground meat until browned and heated through.

  5. Combine Everything: Once all the components are ready, fold the noodles, cheese sauce, veggies, and vegan ground meat together in a large pan. Mix until everything is well-coated and evenly distributed.

  6. Serve: Enjoy this delicious, plant-based comfort meal that’s not only satisfying but also aligns with a healthy lifestyle.
